Le Chef et Bistrotier Parisien
During the last 25 years, Thierry has led Bistro de Paris in San Juan, Puerto Rico.
Chef Thierry Dupont opened Bistro de Paris in July 2000. Since then, he has delighted his clientele with an authentic French Bistro experience.
A Family of "Bistrotiers"
Born in Normandy and raised in Paris, he learned everything there is to learn about the bistro experience from his mother Martine and his father Jean. If you visit us during the Holiday Season, you will find the entire family running the kitchen and dining rooms.
From Paris to the Caribbean
At the young age of 24, Chef Thierry moved to the island of Saint-Martin, where he opened his first business. He created L'Épicerie in Marigot, the capital. It became known to the locals as La Boutique Hédiard, as it carried a large assortment of the brand's products. LÉpicerie carried brands such as Petrossian and many of the great European houses.
The Move to Puerto Rico
Puerto Ricans visiting the small French/Dutch island visited the boutique and enjoyed Chef Thierry's gourmet dishes and products. Many asked him to open a restaurant in Puerto Rico, and he decided it was time to make the move. Because the new enterprise would be significantly larger, he convinced one of his closest friends to join him, and that's how Bistro de Paris became a reality.
The Painter
Estefán Gargost was born in Waterbury, Connecticut, on August 14, 1967 and raised between Connecticut and Puerto Rico. The experiences lived in those places have inspired and shaped him and my art. He grew up with his parents, an older sister, and two younger brothers.
After leaving home at the age of 19 years old, he lived in various US states, Puerto Rico, and European countries.
While leaving in Brussels, he discovered the technique of egg tempera, and vowed to use the technique. Later, when he visited Florence, he watched Italian painters use the technique. It took him quite a few years to finally start using the technique. Thanks to the modern marvel of YouTube, he retook his training, and finally gave it a go! As of today, it is his favorite painting medium. His first attempt was an abstract painting which received a lot of praise… and some negative criticism. As one Facebook “critic” put it: “It shows that you don’t know how to use the technique.” Well, he was right, but he loves that painting.
His art training started when he was a sophomore in Wilby High School in Waterbury. Under the guidance of professors Marie Considine and Dr. Andrew Sirica, he learned to draw and paint, among other things. Professor Considine’s gentle approach to teaching allowed him to learn and find his inspiration. By the time Dr. Sirica got a hold of him, he was a rebellious student artist, searching to define his skills.
Years later, while living in Puerto Rico, he studied under the tutelage of the great Puerto Rican Master, Luis Germán Cajiga. With him, Estefán learned how to use palette knives and create silkscreen prints. His studio in Old San Juan was an inspiring place for the young artist.
